Ingredients:
Cooking Spray
1 head of uncooked cauliflower
1/2 tsp ground cumin
1/2 tsp chili powder or more to taste
1/2 tsp salt
1/2 tsp pepper


Instructions:
Preheat ovens to 400 deg.  Coat a baking sheet with cooking spray.  Cut cauliflower florets into bite-size pieces...should make about 4 cups.  Put cauliflower in a medium bowl and add cumin, chili powder, salt and pepper; toss and coat well.

Spread cauliflower on prepared baking sheet and bake until cauliflower is tender, but not mushy, stirring halfway through, about 10 minutes.

_Turkey Meatloaf

I started making this recipe a few years back when Bobby and I were not eating red meat.  Once you eat this meatloaf, you will wonder how you ever lived without it.  I gave the recipe to my niece Andrea Jane after she discovered that her son was very allergic to meats.  She made it for her family and they loved it!

Ingredients
3/4 cup Heinz Ketchup
3/4 cup quaker oats
4 egg whites
1c salsa
1 Onion chopped
1 1/4 pd lean ground turkey
1pkg Knorr dry vegetable soup mix
Directions
Mix turkey, oats, egg whites, salsa, onion, and soup mix together. Mold into pan. Top with the Ketchup and bake for 1 hour.

This recipe is awesome! Tastes great and you would never know it is lowfat!
